Well-meaning citizen Kate Hester volunteered a bit of goodwill of her own in the aftermath of Hurricane Sandy. Together with many fellow New Yorkers, Kate and The Hester packed up a bunch of food for those affected by the storm. Families left homeless on the Rockaways and elderly people on the shore of Brighton Beach and surrounding neighourhoods were left without power, some of them trapped in high-rise apartment buildings. Mrs Hester broiled some fresh salmon, with honey, butter, soy sauce and scallions and packed it up with some roasted pears. She then made a pot of “magic stew”, which is basically something that fills your heart with warmth and hope. It’s ingredient list is so long and various that it would be too tedious to mention the specifics but let’s say there was something for each letter in the alphabet. Mrs Hester then threw together a selection of the finest roasted vegetables, a lovely pink beetroot hummus and a couscous dish with lots of extra virgin olive oil, fresh herbs and love.
